Liu Tianfu

One of Fujian's first Provincial Skilled Masters
Senior Technician of Chinese Cuisine / Chinese Master Chef
Director, Culinary Teaching & Research Office, Zhangzhou Technician College

Introduction

Liu Tianfu, born in 1963 in Duxun, Zhangpu, is one of Fujian's first Provincial Skilled Masters, a senior technician of Chinese cuisine and a Chinese Master Chef, currently director of the Culinary Teaching and Research Office at Zhangzhou Technician College. Counting from his entry into the trade in 1983, he has spent a full forty years on the front line of culinary education.

The Fujian Liu Tianfu Chinese Cuisine Skilled Master Studio he leads was accredited in 2011 by the Fujian Provincial Department of Human Resources and Social Security, and is among the province's first batch of one hundred provincial master studios. This is an authoritative government assessment of high-skilled talent, distinct from cooking titles spontaneously granted by industry associations or commercial organizations.

Principal Roles & Titles

Craft Career & Achievements

Four decades cultivating talent across Min cuisine

Over forty years in kitchen and classroom, he has trained more than ten thousand culinary professionals, among whom have emerged 3 Chinese Master Chefs and over 20 provincial renowned cooking masters. He perennially serves as an expert reviewer for provincial senior Chinese-cuisine assessments and skills competitions.

Dish development — mastery seen in famous banquets and dishes

Among the dishes he has developed are 6 China famous dishes, 21 Fujian famous snacks, and 5 Chinese famous snacks; the Zhangzhou Sea-bass Banquet he led was selected among China's themed famous banquets. He excels at food carving and hot-dish innovation, with representative carving works such as "Dragon and Phoenix Auspiciousness" and "Flying Phoenix Welcoming Guests".

Writing and teaching to carry forward Min cuisine

As chief editor or contributing editor he has produced over ten textbooks and books including "Food Carving and Plate Garnish", "Southern Fujian Flavors", "Fujian Famous Snacks", "Zhangzhou Snacks", and "The Essence of Chinese Min Cuisine", systematically passing on culinary experience and theory to more practitioners.

Exchange and promotion — bringing southern Fujian flavors across the Strait

Since its founding, the studio has repeatedly led apprentices to food festivals, performed in Hong Kong, and exchanged with Taiwan's industry; in 2012, entrusted by the Zhangzhou Municipal Government, it led Zhangzhou specialty snack practitioners to Taichung for temple-fair exchanges, promoting the Zhangzhou food culture brand.

Settling at Cuixi Villa

In 2026, the Fujian Liu Tianfu Chinese Cuisine Skilled Master Studio officially settled at Cuixi Villa in Changtai, Zhangzhou. Grandmaster Liu Tianfu and the resort's host Xu Yadong became mentor and apprentice, with hands-on teaching across six dimensions: Min-cuisine basic knife skills, heat control, local-snack refinement, banquet menu design, nutritional pairing, and professional theory. Xu Yadong will soon sit the senior vocational skill-level certification exam for Chinese cuisine technicians.

Beyond the master studio's settlement, Cuixi Villa had previously been awarded both "Zhangzhou Traditional Famous Snack" and "Zhangzhou Innovative Famous Snack" honors by the Zhangzhou Snack Association.

High-End Customized Min-Cuisine Banquets

With the grandmaster in residence, Cuixi Villa has for the first time acquired high-end dining capability "personally presided over by a grandmaster". For clientele who value privacy and elegance — corporate receptions, family gatherings, important anniversaries — the resort can arrange high-end customized Min-cuisine banquets personally presided over by Grandmaster Liu Tianfu.

Rooted in the China-famous "Zhangzhou Sea-bass Banquet", combined with Changtai's local mountain-seasonal ingredients, the resort executes from banquet menu design and ingredient pairing to plating and food-carving presentation to high-standard banquet specifications; for important banquets, the grandmaster can personally take the wok and interact with guests.
